I cook flank steak on a semi-regular basis. It's not nearly as expensive as more luxurious cuts of steak, and it's still not too tough of a cut to throw on the grill.

I recently read a tip that suggested scoring less expensive, fibrous cuts — like flank and hanger steak (just as you might score a duck breast or your holiday ham) — to make them a lot more tender. With grilling season still well underway, this was one tip I was more than happy to try out.

I have a bad (if you can call it that) habit of going overboard every time I buy fresh fruit these days. Sweet Georgia peaches? I'll take a dozen! Bright red cherries? A couple pounds will do. Oh, strawberries? Might as well grab a couple quarts. And of course, I'll need half a watermelon.

Q: I have some new 18-gauge aluminum baking sheets with no coating, shiny aluminum. They got put through the dishwasher and now are streaked and dark. I hesitate to use them again, because I think I'd get uneven heating due to the mottled dark streaks.

Mark my words: This is the easy, crowd-pleasing appetizer I will be serving all summer long. Blistered shishito and padron peppers (they're basically interchangeable here) are so much more addictive than you might expect from such a simple dish. It's something about the interplay of crunchy salt, rich oil, and smoky peppers — you can't stop at just one.

Or maybe the addictiveness comes from the fact that you're playing Russian roulette with every bite — there are a few mega-spicy interlopers in every batch of otherwise mellow peppers, but there's no telling which ones.

The manual and settings make it super easy to understand what you're doing. I also love how the steam release button is away from the valve – it makes it much more safe for a first-time user.

Breville is known for making higher-end appliances, and that includes The Fast Slow Cooker. This machine is a slow cooker and pressure cooker, and as a result, is more expensive than other cookers that just have the pressure cooker function. Is it worth the extra cash? I ran it through three tests to find out.

It’s ridiculous, but it works well.1 I also love that his solution to jitters is to make coffee.

For me, I’m not sure if it’s worth carrying all of this stuff rather than tolerating crap coffee when traveling or just bringing a few fancy tea bags. But maybe I haven’t felt the need as much because I just invite myself over to Underscore’s room to make coffee at conferences.

So I guess the solution is to only attend the same conferences, and stay in the same hotel, as Underscore.

Although I have the Hario Mini grinder and wouldn’t recommend it — it takes forever and a lot of cranking to grind 12 grams to AeroPress fineness. Underscore’s wider Skerton is much faster. ↩
