I make these little on-the-go rice balls all the time with leftover rice, and whatever fillings and seasonings are convenient and on hand. You can make them any shape you like, sometimes I'll use damp (lightly salted) hands, other times press them into a mold, for more precision shaping. I think the key is to avoid fussing, or trying to make them too perfect. I posted a photo of these super-onigiri to Instagram the other day - without the recipe. Apologies! I'll try to make good here. These are made with leftover sprouted brown rice and cooked mung beans. They're filled with a bit of avocado, and I made a quick almond-butter + miso slather that I hit with the broiler for a quick flash. I only did little nori strips as wrappers because I was eating them at home, but I'd do a full wrap if I'm taking them for lunch or travel. You can do either.]]></description>

The quick mushroom stock made from dried porcinis, the king of mushrooms, and the fresh mushroom varieties used in this recipe create a dish that is firmly grounded in its rich earthiness. It is an ode to my favorite ingredient and will delight every mushroom lover: creole. The creole seasoning used here is adapted from Emeril's Essence Creole Seasoning. The recipe below makes more than you will need for this one recipe, but it keeps well in an airtight jar. For the tomatoes, I used some that I jarred last summer but good-quality canned tomatoes will do just fine. Just make sure they are nice and juicy.]]></description>

My sweaters have been in a relentless rotation. My hands are constantly cold and I seem to have had the sniffles for months now, which means a chapped nose, which means I can’t really make it to the gym now can I?  To make matters worse, I’m actually working on a project (can’t say what, sorry), so I’m not even able to leave the country to somewhere warm and beachy and margarita-y to dull my winter blues. And before you east coasters start chirping about what a suck I am and how hard you have it, I know you’re worse off. Let’s just all agree that winter blows, and it’s high time it took a long walk off a short pier.

The only way I really know how to beat any sort of blues is through food (okay, and drink), so I wanted to make something that took me far away to my own little kokomo, which is Maui. I’ve gone off about Maui before, so I won’t bore you here. But I will say it’s my favorite place in the world, and I make sure I get there yearly come hell or high water. One of the things that draws me back to Maui is the food– salty, sweet, full of “umami”, and just plain old comforting. I spent the first few years of my life there and went back every summer to visit my grandparents who lived there, so comfort to me is fried rice and shoyu chicken, lomi lomi salmon, tuna poke, and of course, kalua pork. Alright, I’ll come clean: yes, I’ve eaten and enjoyed spam, and you can take your judgement elsewhere because it is the BEST. *loses 500 subscribers*  One of the best and most celebrated Hawaiian chefs is Sam Choy, who’s known as the godfather of Hawaiian regional cuisine. He’s taught me a lot about how to mimic the flavors of the islands at home, and I decided to pay homage to him with this dish. It’s insanely flavorful, relatively easy (even east coasters can do it!), and goes mighty well with a Mai Tai. Note that the rice needs to be precooked and cooled, and the chicken marinated for minimum 2 hours.]]></description>

We also have a tradition of making it in pressure cookers, making cooking time virtually negligible. Brown rice, as this dish is commonly called, is not to be mistaken with healthy brown rice. It's actually a pilaf of basmati rice tinged with the bronze hue on onions fried in spiced oil.

Brown pilaf is eaten with a mildly spiced, hearty dish called Dhansak, a combination of lentils, vegetables, and spices that's commonly adorned with lamb or chicken. A simple Kerala-style chicken or lamb curry, like this Manglorean mutton gravy would also make an excellent accompaniment. 

Red onions work best with this recipe—they take on the characteristic rich brown hue more easily than white or yellow varieties. If you're prone to burning onions quickly, make sure to cook them slowly in the oil—you're looking for soft and brown, not black and shriveled. A mix of fennel seeds, cinnamon, and dry bay leaf add an intense perfume to the oil, releasing a comforting, delicious aroma that lingers long after the rice is done. And even though the recipe itself is simple and quick, its elegance and complex flavor profile impresses my guests without fail.]]></description>

It was one of the first dishes I attempted to make in college, though I should point out that it usually entailed nothing more than opening a can of beans, mixing in some rice, and calling it a day. I've progressed beyond that point, but I'm always looking for new tricks, because while the concept sounds simple, it's surprisingly easy to end up with a batch that is dry and flavorless.

The easiest way to add flavor is to toss in something meaty, but add too much and you'll risk making things greasy. It's a balancing act. Bacon carries most of the load here, but it gets some help from some chicken stock, which lends a savory edge without clobbering you over the head. I also picked up a trick from this gallo pinto rice recipe, and decided to add some Worcestershire sauce. From there, I focused on the one element that usually gets forgotten—acid. For this recipe, I used some apple cider vinegar, which helps cut through everything else.]]></description>

You can have this dish by itself or served with poppadums. It's light, hearty, and has a wonderful mix of tangy and crunchy elements.

Lime rice is originally South Indian, but it has found its way into most homes across the country. The tempering of the mustard seeds, curry leaves, and chili impart a mild spiciness that compliments the sourness of the lime quite well. If you love tang, you could increase the amount of lime juice a tad. If you want to dress it up a little more, roasted cashew nuts can be tossed in during the tempering. And, if you have a weakness for coconut, you can add unsweetened coconut shreds as a garnish. It's the fact that it's so easy to customize that makes it one of my favorite meals.]]></description>

So, with this one I have posted two, reasonably traditional and comforting recipe creating in a row! If you went to the right kind of Indian restaurant and were fastidious you might even call them, well, restaurant staples!!! If it makes you feel better they could be Indian restaurant staples anywhere in the world, includingIndia, but staples are also what form the core essentials of a cuisine. Despite, my love for novelty I cannot really imagine offering a Chinese restaurant the time of day, if it did not have some good options for fried rice. I also know that my husband would have a conniption if we tried Thai food in a place that did not make a mean Pad Thai.I guess that along those lines, it makes sense for Indian restaurant to feature birayani’s and tikka masalas. With this preamble, let me bring on Chicken Birayani – An elegant, flavorful and comforting one dish meal.
This recipe is a class dish, and it was featured the past Sunday at the request of a student who said, this really was her favorite or after careful cross questioning, I learnt it was her husband’s favorite. She was Italian and he was Indian.  However, once agreed, Chicken Birayani was made, although I was later informed by the student that she would have really liked a vegetarian biryani option, but deferred to her husband’s choices.  I was not quite sure what to make of this information, other than wondering why the husband did not come to the class instead of her.
There are many renditions of this recipe! This particular one is a relatively simpler one hailing fromHyderabad, that I learnt during graduate school from my friend Ali. A birayani is a dish of Persian origin derived from the Persian word Birayan meaning to fry. These rice started in popularity inNorthern India, where they were introduced by the Moghuls, but later have moved to other parts of the country where the dish has been adopted and adapted to various regional nuances. So, there really is no single Birayani recipe, or one authentic style. So, the question becomes, what allows this dish to meander through its variations and still keep its name, IMHO – cooking together the meat and rice in layers, much like a casserole. It is important to have a good heavy cooking pot for this rice dish. I usually reserve lined cast iron cookware for this exercise.
I use a spice blend that I call my birayani spice mix, and I have featured this recipe here. I will make a confession that I have never used a store made blend, just because I usually tend not to, so I cannot really recommend a store option. I have had good luck with SWAD products, so if you want to give their blend a try please do so and let me know how it works.]]></description>

I’ve come to believe there’s almost nothing that can’t be improved with the addition of smoked paprika or pimentón, and this version of Basque chicken is proof of it.

This dish started life as a Delia Smith recipe, and it hasn’t strayed too terribly far from its origins. It’s just that as I cooked it for the first time—following Delia’s recipe to the letter—I found myself wondering “Why?” a whole lot. Why not cook the chorizo first and then take advantage of the flavorful fat to cook the chicken? Why use sun-dried tomato paste and sun-dried tomatoes? Why not reduce the wine, and actually, why use wine at all instead of sherry, which would add a richer, “meatier” flavor? And finally: why use regular paprika instead of smoked?

I couldn’t come up with any plausible answers to these questions, so as I’ve made and re-made this one-pot meal over the past year, I’ve adapted it to fit my tastes and my cooking style. I think the version I’ve come up with is not only (ahem) tastier and more straightforward to cook, it’s also just different enough from Delia’s to warrant its own entry here. I would've thought I'd get sick of it, but no—my craving has only gotten worse. But I only feel like eating white rice because, along with whole wheat pasta, nutty and hearty brown rice is never a first choice (though I'll eat it if it's in front of me). So when my friend Ross was visiting from out of town and requested that we switch up our white rice binges with the "healthier" brown rice, I begrudgingly gave in and bought a tiny box of it.

In the end I'm grateful for my friend's intervention. Brown rice is indeed delicious, and it works remarkably well in this one-pot meal. For this dish, dark meat chicken thighs are browned and then tucked into the pot to simmer with sautéed shiitake mushrooms, leeks, crunchy water chestnuts, and brown rice. For the fluffiest texture, rinse the rice to remove any excess starch. Even after cooking for 40 minutes on the stove, the brown rice is still nice and chewy, and the chestnuts are incredibly crisp. (If you can source fresh chestnuts at the market, even better). Flavorful sesame oil pulls all of the ingredients together in this hearty and satisfying meal.]]></description>

Its scarcity (it takes some four thousand crocus blossoms to create an ounce of saffron) and the belief that it could be used to treat everything from wounds to the plague even caused the Austrians to go to war over the spice during the Dark Ages. This is at least one feudal folk myth that modern science has corroborated. Studies have shown that saffron has outstanding antibacterial and antiviral properties and also aids digestion. People sometimes balk at saffron's cost, but it isn't unreasonable when you consider its potency; this recipe calls for only 1/8 teaspoon, and as you'll see, a little goes a long way. This pilaf is a delightful and gorgeous dish. The rice is sautéed before cooking to avoid that sticky, gummy consistency, and ginger, parsley, and lemon zest add zing.

Prepare ahead: Soak the rice in cool water and the juice of half a lemon for 8 hours or overnight before cooking; this will make its nutrients more available and decrease the cooking time. If you don't have time to soak the rice, add an extra 1/4 cup of broth and cook for an additional 15 minutes.]]></description>

Sometimes three times a day. And in all this time, never once have I ever tired of it. The countless rice recipes in Indian cuisine and the various side-dishes that rice plays a perfect canvas to probably have something to do with it.
Families usually buy rice by the sack full. A few hundred pounds to last the year. And a lot of care is taken to source the perfectly aged grain. The older it is, the better. The last few weeks have seen the cool winds recede and the heat making itself comfortable. Summer is here. Which means only one thing: The last harvest of fresh peas needs to find a way to my table before I have to settle for the frozen ones through the rest of the year.
With plenty of rice at hand, I thought there's no better way to say farewell to these emerald morsels than with Mutter Pulao (rice cooked with peas). The subtle, fragrant spices coat the rice, and the peas add a wonderful sweet burst to the dish.
It's a recipe full of nostalgia for me, because we'd eat it often as children. My brother and I would hastily pick out the succulent peas as soon as the pulao was served and each of us would vie for the bigger haul, when no one was looking.
All sibling rivalry would be forgotten as soon as we started eating, of course. It's one of those dishes that make you too happy to snitch.
So tonight, Peas Pulao it is. Yet another meal to reminisce.]]></description>

    <dc:creator>mlednor</dc:creator><description><![CDATA[A Facebook friend asked me recently if I had a list of my favorite recipes, and I was sorry to say that I didn’t. But what a good idea! Or so I thought, until I started to name all the recipes I considered favorites and found that the list would be so long that it would be useless. So I decided to reshape the question: Which recipes do I make over and over again? I decided to focus on the recipes I actually make week-in and week-out plus a few that I make regularly for holidays or special occasions, such as green bean casserole for Thanksgiving.

After I thought of it like that, my list became both much shorter and much less fancy. It includes the Dirty Little Secret Soup that I make once a week (a little differently each time), the chickpea “tuna” salad I pack in my daughter’s lunch, and at least 4 different kinds of split-pea soup. All have been thoroughly tested and are dishes that we–teenager included–love. You can see the full list of my family’s favorites here (it’s now a regular category in the recipe index).

As I was making the list, I asked my husband to help me think of every meal we eat regularly, and I was a little surprised to discover that several of the dishes in our regular rotation haven’t appeared on the blog. I guess I’ve been so busy trying to feature new recipes that I haven’t bothered with the very simple, stand-by dishes that make up a big part of our diet. So I’ve decided to rectify that. For the next three weeks, I’ll be adding a new “old” recipe each week. I’ll reveal what food we always travel with and tell you how to make the vegetable-rich pasta dish my daughter loves.

My first old favorite reveals another “dirty little secret” of my family’s eating habits: about once a week, we eat burritos for dinner. On really rushed nights, we rely on canned fat-free refried beans (I know, I know–sodium and BPA, but we’re talking emergency meals) and wrap them in whole wheat tortillas along with lettuce, tomatoes, red onions, jalapenos, and my daughter’s specialty, guacamole (there’s another recipe I’ve never posted.) But when I have leftover brown rice, I skip the refried beans and throw together this easy Spanish rice. It makes a great burrito filling or side dish and doesn’t take much longer than heating up a can of beans.]]></description>

While Egyptians have risen up like a tsunami that will not abate until it has destroyed the Mubarak regime in its wake, all I can do is follow the news. While history is being made on the streets of Cairo and Alexandria, all I can do is write about my favorite Egyptian street food. But Egypt is also on my mind for another reason. The pictures below are from three weeks ago when my Egyptian friend Yasmin invited a few of us to lunch to learn how to make Koshary just a few days before she was about to leave for Egypt for a month-long vacation.  A few hours ago, she posted a quick note on Facebook to let us know that she is fine. Relieved, it struck me how today events around the world affect me in a much more personal way than even ten years ago. And in my small way, writing this post inexplicably makes me feel closer to the people of Egypt.

Koshary is one of the ultimate street foods. Just like Egyptians from many walks of life have come together to create the perfect storm of a protest, the many layers in this humble dish come together to make a very satisfying dish. It is affordable, filling and fairly healthy though loaded with carbs. While the various ingredients take time to assemble, it is simple to make. Rather than the pyramids or the sphinx, this dish is one of my favorite things from my trips to Egypt.

There are many recipes for Koshary and some include toppings that others don’t. It is up to you to decide which of the toppings to include although I highly recommend keeping all of them. Koshary is typically served with a tomato sauce and a garlic sauce. Yasmin combined the two sauces for ease. This recipe serves 4. The various ingredients could be prepared ahead of time and brought to room temperature or warmed before serving.]]></description>

Once you own oregano, cumin, chili powder, and dried coriander, making that bowl of chili is a breeze. But if you don't, even making a dish as budget-friendly as chili can become an expensive, annoying undertaking.

This rice pilaf gets much of its flavor from plain old pantry peppercorns, to the dismay of the rest of my stocked spice rack. By frying the whole peppercorns in oil at the beginning you extract much of their flavor; cooking them slowly with the rice mellows them enough to make them palatable. Vegetables, almonds, and fatty coconut milk add to the savoriness of the pilaf, but in large part the deliciousness of this hearty rice is owed to these peppercorns—which is good news for your wallet, no matter how stocked your spice rack is.]]></description>
