It is another amazing recipe that uses chicken thighs.  If you haven’t cooked much with chicken thighs you really need to give them a try.  They are so moist! A few other great chicken thigh recipes are Sticky Coconut Chicken and Asian BBQ Chicken.  Not only is thigh meat nice and moist it is also inexpensive!

This recipe comes from one of my favorite food blogs – Our Best Bites.  The spicy part of the recipe is moderate and you can raise or lower the heat by adjusting the amount of spices used.

I keep a small file box with folders labeled with different categories – salads, main dish/beef, main dish/chicken, side dishes, desserts etc.  When I find a recipe in a magazine, newspaper, on a blog, or a friend shares one with me it goes into this file until I have a chance to try it.  I then decide if it is a “Keeper” or not (if it’s not, it goes in the trash – oops I mean recycling – I do live in Oregon!)

Each Sunday when I am doing my meal planning I grab that file and pick out one or two new recipes to incorporate into the week’s plan.

This week that recipe was Asian BBQ Chicken.  A recipe I found on Our Best Bites – a great food blog.

This is a quick and easy dish to put together – it does need to marinade at least 4 hours so a little planning is required.  We like chicken thighs at our house because it is such moist meat and they are inexpensive.

One trick I like to use with marinaded meat is when I bring the meat home from the store, before I freeze it, is to mix up the marinade and add the meat right into it and then freeze it.  That way the meat is marinading as it is thawing and it makes for easier and quicker meal prep on those nights when life is crazy!

I didn’t add the curry powder but I am sure it would be great – I was just out of it.

It was a hit at dinner and everyone loved it – Tessa commented several times how good it was.  I served it with lime cilantro rice and a broccoli slaw.]]></description>

We are big fans of achiote and make up big batches of it so we can slather chicken in the morning and have a quick and delicious dinner at night. There is really no flavor like it and it pairs wonderfully with other favorite taco toppings: avocado, salty cheese, and pickled onions. 

This recipe will make enough powder for another meal. You can keep it in an airtight container in the pantry until ready to use. Or, do as we do and grill up a double batch and freeze the chicken for even quicker meals at a later date. It makes a great chicken salad with a little mayo, fresh cilantro, and chopped onions.]]></description>

Ahmed Aslam Ali claims he invented the dish, which bears a strong resemblance to Punjabi butter chicken, in his Glasgow restaurant in the early 1970s after a customer complained that his chicken tikka was "a bit dry" – a story repeated by innumerable others, often embellished with the detail that the original sauce was made from tinned tomato soup.

But as credit has also been given to everyone from the last Mughal emperor, Bahadur Shah II, to Tony Blair's friend Sir Gulam Noon and Delhi street food vendors, it seems likely that we will never know who first came up with the idea of smothering tandoori chicken in a rich, tomatoey gravy. My suspicions are that chicken tikka masala is simply a British adaptation of the aforementioned murgh makhni – Alfred Prasad of the Michelin-starred Tamarind restaurant in London reckons the only significant difference between the two is the onions in the CTM, while Indian-born food blogger Michelle Peters-Jones tells me it's the cream and fenugreek leaves in butter chicken that set it apart.

I'll trust them on the specifics; whatever its pedigree, done well, chicken tikka masala is undeniably delicious. And you know what they say: if you want a job done well, do it yourself.]]></description>

As Lizzie Collingham writes in her book, Curry: a Biography, the name korma has become a codeword for anything “mild and creamy”, just as vindaloo carries the warning sign: HOT!

And though, having grown up on them (before graduating to the spicy heights of the chicken tikka masala), I have to admit a certain residual fondness for the almost marzipan-like flavours of a classic British curry house korma, I think we’re all big enough now to appreciate the more sophisticated flavours of the real deal. Which, despite my distinct lack of imperial kitchen space, proves surprisingly simple to make at home.]]></description>

This recipe splits the difference between that and chicken paprikash, and while my research didn't turn up an exact precedent for this preparation, I did find that it's somewhat similar to a beef and pork stew called "Marosszéki heránytokány" in George Lang's "Cuisine of Hungary" (New York: Bonanza Books, c. 1971; p. 280 in my copy). Thickening the stew with flour and/or sour cream at the end of cooking is optional. You can omit both if you want. Alternatively, leave the sour cream out of the stew, but serve it as a garnish.]]></description>

I’m wearing a fluffy sweater and so are all of my friends and we’re riding cute bikes with cute baskets and when we get to where we’re going, we sit on the ground and eat cute pies -- pies that are comforting and hearty and have magically stayed warm throughout our long and hilly bike ride. 

These little pot pies are a good contender for my fantasy, I think. They’re small, they retain heat well, and they’re deceptively filling. They’re everything you want in a chicken pot pie and nothing you don’t. (No mushrooms, for example. But that’s just my personal preference -- add them if you want!) In the fantasy, I’ve taken the time to personalize each of the pies with intricate pie crust details and designs, but okay, I’m getting ahead of myself. 

These pies will totally work with your leftover turkey from Thanksgiving -- simply sub it for the chicken and sub the chicken broth concentrate for vegetable broth concentrate. If you absolutely cannot stand to look at another pie after Thanksgiving, wrap these guys tightly in plastic wrap, freeze them, and reheat in the microwave as desired.]]></description>

It's such a flavorful cut that I'd had almost no interest in making fajitas with other more bland and lifeless proteins, like chicken. A few years back, though, I decided it was time to give poultry a try, and I set out on a mission to devise a winning recipe for the grill. After a whole lot of experimentation, I came up with a great marinade—a quick purée of grassy cilantro, tart lime juice, olive oil, brown sugar, salt, cumin, and crushed red pepper—that gets the fajita flavor profile down pat.

Searching for ways to get more mileage out of that marinade, I wondered how it would hold up in kebab form. The answer? Very well. Which is great news, since I've been on a kebab kick all month long—just check out my grilled kebab guide if you have any doubts.

The cubed and marinated chicken thighs stay nice and juicy over a hot fire, retaining a bright and tangy flavor that, when combined with bell peppers and onion, tastes just like a great fajita—minus the tortilla, of course.]]></description>

My sweaters have been in a relentless rotation. My hands are constantly cold and I seem to have had the sniffles for months now, which means a chapped nose, which means I can’t really make it to the gym now can I?  To make matters worse, I’m actually working on a project (can’t say what, sorry), so I’m not even able to leave the country to somewhere warm and beachy and margarita-y to dull my winter blues. And before you east coasters start chirping about what a suck I am and how hard you have it, I know you’re worse off. Let’s just all agree that winter blows, and it’s high time it took a long walk off a short pier.

The only way I really know how to beat any sort of blues is through food (okay, and drink), so I wanted to make something that took me far away to my own little kokomo, which is Maui. I’ve gone off about Maui before, so I won’t bore you here. But I will say it’s my favorite place in the world, and I make sure I get there yearly come hell or high water. One of the things that draws me back to Maui is the food– salty, sweet, full of “umami”, and just plain old comforting. I spent the first few years of my life there and went back every summer to visit my grandparents who lived there, so comfort to me is fried rice and shoyu chicken, lomi lomi salmon, tuna poke, and of course, kalua pork. Alright, I’ll come clean: yes, I’ve eaten and enjoyed spam, and you can take your judgement elsewhere because it is the BEST. *loses 500 subscribers*  One of the best and most celebrated Hawaiian chefs is Sam Choy, who’s known as the godfather of Hawaiian regional cuisine. He’s taught me a lot about how to mimic the flavors of the islands at home, and I decided to pay homage to him with this dish. It’s insanely flavorful, relatively easy (even east coasters can do it!), and goes mighty well with a Mai Tai. Note that the rice needs to be precooked and cooled, and the chicken marinated for minimum 2 hours.]]></description>

Pepper, cinnamon, cardamon, and many more of the nation's staple spices grow in abundance there. And, as you might expect given this rich bounty, the region's cuisine is laced with different combinations of these spices, each giving unique flavor profiles to the dishes they season.

Nadan Khozi is a typical curry in Keralan houses, where the blend of spices differs just a little from home to home. The ingredient list might look long, but don't let it daunt you—once you understand that all Indian food is basically an amalgamation of spices, no recipe is really all that difficult. Though the specific spices and their proportions change, the underlying techniques are almost always the same.

This particular dish is especially comforting on nippy evenings (not that we have too many of those here). You can choose to turn down the heat by reducing the amount of red chili powder or whole chili by half. The roasting of the spices gives the dish a nutty, smoky flavor that adds to the dish's satisfying warmth, rounded out coconut milk. All in all, it's a particularly fitting tribute to the land of spices.]]></description>

It's easy to do once you've had a first go, and it can be endlessly tweaked to suit your own taste. Also, the cooked chicken freezes well once cold, so even easier fried chicken nights lie ahead with only a defrost and bake in a hot oven needed.

There is a lot of salt in the recipe, but much like French fries, don't eat it every day and leave it out or cut back if you prefer. But for me, salt is part of the character of good fried chicken and, arguably, a little stock cube crumbled in gives the flavour a boost.

Here are three spice variations to choose from to use in the flour, and though it seems excessive, you do need all of that spice mix in the flour to give the coating a rich fried chicken flavour.

For a general "herb and spice" flavour, I use 1 tsp each of ground black and white peppers, smoked paprika, ginger, mustard, coriander, allspice, dried thyme and dill, plus a finely crumbled chicken stock cube.

For a 5-spice blend, use 5 tsp each of five‑spice powder, ground ginger and smoked paprika and 2-3 tbsp sesame seeds. Also, whisk 3 tbsp sesame oil through the batter.

For a garam masala blend, use 5 tsp each of garam masala, ground coriander and cumin, 2-3 tsp chilli powder and 2-3 tbsp nigella seeds.]]></description>

The dish that always gets rave reviews? Well this one's mine. There's nothing fancy about it—most of the preparation can actually be completed ahead of time—but it's really appealing visually, and absolutely delicious. The tried and true combination of crispy, golden brown chicken cutlets, ripe cherry tomatoes, and peppery arugula also takes a mere 45 minutes to prepare, from start to finish.

This dish actually evolved after I lived in Milan, Italy. At that time, my favorite dish to order was Cotoletta alla Milanese, which is a slice of bone-in veal loin that's pounded thin, breaded, and fried in butter. It is a typical dish found across the region of Lombardy that's most likely derived from Wiener Schnitzel. During warmer months, many restaurants also top this dish with a tasty tomato salad; I found the combination of a crispy, tender chop and juicy tomatoes intoxicating. When I returned to North America, I did my best to try to replicate it, but it was virtually impossible to find bone-in veal chops anywhere, and it just didn't work well with veal scallopini. I ultimately decided to try using boneless, breaded chicken breasts topped with tomatoes and arugula, and I've been making it the same way ever since.

What makes this dish extra special is the homemade mixture of breadcrumbs seasoned with Pecorino cheese, lemon zest, chili pepper, parsley, salt, and pepper. I've been making my own breadcrumbs for years, and it really is a great way to use up day old bread. When I have slightly stale bread on hand, I simply cut it into cubes and store it in bags in the freezer. When I need breadcrumbs, I throw some of the frozen bread cubes in my food processor and pulse until finely chopped. You do want a little texture, but you also want crumbs ground small enough to use as breading. Once my crumbs are the right size, I throw in my preferred seasonings, and pulse until everything is mixed.

I know it may sound redundant that I keep preaching fresh, seasonal ingredients, but this is truly what makes Italian food so good. The tomatoes used in this recipe should be very fresh and sweet, the arugula crisp and peppery. I dress the tomato mixture with a little minced garlic, olive oil, lemon, salt and pepper, and then serve the dish with additional lemon wedges—the additional citrus really helps the flavors pop.]]></description>

We're talking chicken with a deeply charred, smoky crust, a tender, juicy texture, and deep flavor from its yogurt and spice-based marinade. Is it possible to get there without a 1,000°F coal-burning tandoor oven?

It wasn't easy, but we figured out how to replicate it on the grill by using an intense brine-marinade hybrid, keeping marination time to a minimum (to keep the meat from turning mushy), and by using smaller chickens or cornish game hens to ensure meat that is perfectly tender.

From there, putting together a flavorful sauce was a snap. We sautéed onions, garlic, and ginger until nearly blackened in spots before adding a homemade spice blend. Next we add tomatoes, cilantro, and heavy cream and let the whole sauce simmer before puréeing it and adding the grilled chicken.

One problem showed up: the chicken overcooked by the time it was done picking up flavor in the sauce. To solve this, we made sure to pull the chicken off the grill extra early to let it cook through as it slowly heat up in the sauce.]]></description>

Like South Asian takes, however, Jamaicans incorporate coconut milk, resulting in a silky, soupy and singular dish that pairs well with Jamaican beans ("peas") and rice. Season some sliced plantains with salt and pepper; place them in a pan with melted butter and a bit of brown sugar, and allow them to caramelize for another perfect companion.

If you want to kick up the heat, add another Scotch Bonnet pepper or, perhaps, a bit of cayenne.

Because results vary considerably depending on the curry mix you use, you may need to tweak the flavors slightly. Or feel free to make your own (see note below). Add a bit more vinegar and Worcestershire sauce if you find it lacking in depth.

Note: Note: If you want to make your curry spice mix from scratch, do so by combining 2 tablespoons each of cumin seeds, whole mustard seeds and anise, along with 3 tablespoons of coriander seeds and 1 tablespoon each of whole allspice and fenugreek. Toast the mixture in a dry pan over medium heat until fragrant, and add a hefty 5 tablespoons of turmeric. Then, grind in a spice grinder, transfer to a tightly sealed container and store in a cool, dark place until you're ready to use it.]]></description>

So, with this one I have posted two, reasonably traditional and comforting recipe creating in a row! If you went to the right kind of Indian restaurant and were fastidious you might even call them, well, restaurant staples!!! If it makes you feel better they could be Indian restaurant staples anywhere in the world, includingIndia, but staples are also what form the core essentials of a cuisine. Despite, my love for novelty I cannot really imagine offering a Chinese restaurant the time of day, if it did not have some good options for fried rice. I also know that my husband would have a conniption if we tried Thai food in a place that did not make a mean Pad Thai.I guess that along those lines, it makes sense for Indian restaurant to feature birayani’s and tikka masalas. With this preamble, let me bring on Chicken Birayani – An elegant, flavorful and comforting one dish meal.
This recipe is a class dish, and it was featured the past Sunday at the request of a student who said, this really was her favorite or after careful cross questioning, I learnt it was her husband’s favorite. She was Italian and he was Indian.  However, once agreed, Chicken Birayani was made, although I was later informed by the student that she would have really liked a vegetarian biryani option, but deferred to her husband’s choices.  I was not quite sure what to make of this information, other than wondering why the husband did not come to the class instead of her.
There are many renditions of this recipe! This particular one is a relatively simpler one hailing fromHyderabad, that I learnt during graduate school from my friend Ali. A birayani is a dish of Persian origin derived from the Persian word Birayan meaning to fry. These rice started in popularity inNorthern India, where they were introduced by the Moghuls, but later have moved to other parts of the country where the dish has been adopted and adapted to various regional nuances. So, there really is no single Birayani recipe, or one authentic style. So, the question becomes, what allows this dish to meander through its variations and still keep its name, IMHO – cooking together the meat and rice in layers, much like a casserole. It is important to have a good heavy cooking pot for this rice dish. I usually reserve lined cast iron cookware for this exercise.
I use a spice blend that I call my birayani spice mix, and I have featured this recipe here. I will make a confession that I have never used a store made blend, just because I usually tend not to, so I cannot really recommend a store option. I have had good luck with SWAD products, so if you want to give their blend a try please do so and let me know how it works.]]></description>

    <dc:creator>mlednor</dc:creator><description><![CDATA[Last year I took a Southeast Asian cooking class on Pulau Ubin, a tiny island in Singapore. Nestled in the jungle in an old kampung style house, I learned how to prepare an important ingredient that forms the flavor base for much of the cooking in these parts: chili sambal. Though more complex, sambal is the Southeast Asian equivalent to a French mirepoix (celery, onions, carrots) or Spanish sofrito (garlic, onions, peppers). As chili forms one of the main ingredients, sambals are usually extremely hot. It's used to flavor everything in Singapore, from vegetable dishes, to fish, to meat. It's even served on the side to be dabbed onto your food at will, just in case your dish wasn't making you sweat enough. Here, a dish isn't proper unless it makes you feel the pain.

To make the sambal in class, we pounded out the ingredients (dried chilies, Thai chilies, shallots, garlic, ginger, and salt) by hand using a mortar and pestle. In my kitchen, I often skip that step and plug in the food processor. To cook, the mixture is fried until softened, golden, and the oil begins to separate from the aromatics. My chef instructor said to "cook it till the aroma of the chili makes you cough." A warning here: it does. Tart tamarind pulp and palm sugar are mixed in to balance out the heat.

I'd rather eat wings, thigh, drumsticks, necks, backs, the heart, liver, or gizzard, but I don't have a beef with chicken breast. Still, there are certain cooking methods where chicken breast just shouldn't belong. One of them is skewered on kebabs and grilled over high heat. The reason is because the pieces are too small and the heat too intense: It's a recipe for a desiccated disaster.

Which is why I'm so impressed with this recipe from our grilling master Josh Bousel. With the judicious use of a soy-sauce brine and a protective coating of none other than juicy, fatty bacon, he's managed to make chicken breast 100% grilled-kebab-friendly. That's quite a feat. A teriyaki glaze and big, sweet, dripping hunks of grilled pineapple threaded onto the skewers certainly don't hurt anything either.

So, if you're a proud lover of chicken breast and don't care how many people try to convince you to switch over to other cuts, here's one recipe you can turn to and eat with pride. And the rest of us thigh-lovers may just join you.]]></description>

I’ve come to believe there’s almost nothing that can’t be improved with the addition of smoked paprika or pimentón, and this version of Basque chicken is proof of it.

This dish started life as a Delia Smith recipe, and it hasn’t strayed too terribly far from its origins. It’s just that as I cooked it for the first time—following Delia’s recipe to the letter—I found myself wondering “Why?” a whole lot. Why not cook the chorizo first and then take advantage of the flavorful fat to cook the chicken? Why use sun-dried tomato paste and sun-dried tomatoes? Why not reduce the wine, and actually, why use wine at all instead of sherry, which would add a richer, “meatier” flavor? And finally: why use regular paprika instead of smoked?

I couldn’t come up with any plausible answers to these questions, so as I’ve made and re-made this one-pot meal over the past year, I’ve adapted it to fit my tastes and my cooking style. I think the version I’ve come up with is not only (ahem) tastier and more straightforward to cook, it’s also just different enough from Delia’s to warrant its own entry here. Unfortunately, I can't say the same for chicken, which dries out quickly and ends up becoming flavorless sticks of poultry. Of course, chicken skewers can be delicious when done right, with this chicken satay being a prime example.

The sweet, pungent marinade for these chicken satays includes fish sauce, lemongrass, sugar, lime, and turmeric, which embeds the chicken with flavor even after a relatively short soak of only an hour. On the grill, in order to maintain juiciness, a careful eye must be kept to ensure the chicken is pulled off when just cooked through. Even if you go over just a little, the skewers are still plenty good, thanks to the powerful marinade. A dip in a spicy peanut sauce also added to the success here.

The pairing of the earthy and bright chicken with a creamy, spicy, and sweet sauce produced a chicken skewer that has the ability to change your mind about chicken skewers.]]></description>

I would've thought I'd get sick of it, but no—my craving has only gotten worse. But I only feel like eating white rice because, along with whole wheat pasta, nutty and hearty brown rice is never a first choice (though I'll eat it if it's in front of me). So when my friend Ross was visiting from out of town and requested that we switch up our white rice binges with the "healthier" brown rice, I begrudgingly gave in and bought a tiny box of it.

In the end I'm grateful for my friend's intervention. Brown rice is indeed delicious, and it works remarkably well in this one-pot meal. For this dish, dark meat chicken thighs are browned and then tucked into the pot to simmer with sautéed shiitake mushrooms, leeks, crunchy water chestnuts, and brown rice. For the fluffiest texture, rinse the rice to remove any excess starch. Even after cooking for 40 minutes on the stove, the brown rice is still nice and chewy, and the chestnuts are incredibly crisp. (If you can source fresh chestnuts at the market, even better). Flavorful sesame oil pulls all of the ingredients together in this hearty and satisfying meal.]]></description>

Moving on, this recipe can be made almost any time of year and the potatoes can be substituted for other root vegetables. The basic process is the same: sear the chicken to get the golden, flavorful skin, then brown the potatoes or whatever vegetable you're using, add stock, and then put the chicken back in to finish. Making a quick pan juice of whatever is left finishes off the dish, and serving it with a green salad ensures that you have a more rounded out meal.

The lemon in the dish brightens up the chicken with just the slightest hint of butter for a creamy finish and I just think that mushrooms, chicken and potatoes are a fantastic combination.]]></description>

Or at the very least, into the canned Mexican goods section of our supermarket for a few staple. First, we add a can of chopped green chilies to our basic creamy stovetop mac and cheese (if you want to get extra fancy, you can roast your own fresh chilies to stir in), followed by a cup of our salsa verde (you do keep some with you at all times, right?).

You can use store-bought rotisserie cihcken if you'd like, shredding the meat up before adding it to the pot, but it's better and only slightly more difficult to poach your own chicken. Heck, you can just do it in the very same pot you're about to cook your pasta in. Finally, swapping out some of the American or cheddar cheese with spicy pepper Jack brings the flavors full circle. Gooey, tangy, a little bit hot, this is perfect comfort food for getting over the remnants of that fiesta borrachada last night.]]></description>
