    <dc:creator>Aetles</dc:creator><description><![CDATA[Jag ser en tydlig trend i kostsammanhang där målet med dieten blir mer och mer specifikt och samtidigt mer och mer diffust. Man vill i allt högre grad komma åt någon viss specifik parameter i hälsan, nu är det kroppens nivåer av inflammationsmarkörer som är i ropet. Målet är förstås en bättre hälsa och sänkt risk för olika åkommor men vägen dit är betydligt mer diffus än kanske någonsin tidigare och om inte  omöjligt så är det åtminstone oerhört svårt att se om man nått sitt mål.

Varför menar jag då att inflammation inte är så lätt att sätta fingret på? Vi har i mer än 20 år vetat att det som brukar kallas låggradig inflammation är en viktig drivkraft bakom flera av våra viktigaste folksjukdomar såsom hjärt- och kärlsjukdom, cancer och diabetes. Att minska graden av inflammation borde då vara en no-brainer. 

Nja, det är inte fullt så enkelt. Om inflammation är bra eller dåligt, något vi vill bli av med eller ha mer av är situationsberoende och också beroende av källan till inflammationen. ]]></description>

That’s how I describe intuitive eating when someone asks me what it is. It’s not a new concept; the anti-diet has been around pretty much since the diet. Dietitians Elyse Resch and Evelyn Tribole were among the first to turn it into an actual program, which they laid out in their book, Intuitive Eating (first published in 1995, followed by two later editions). Intuitive eating was soon adopted by a number of nutrition professionals (and eating disorder treatment programs), but still, it’s the kind of mystical-sounding phrase that often raises eyebrows — which tend to shoot up even higher when I explain the fundamentals. In intuitive eating, you can (and should) eat whatever you want. There are no good or bad foods, no points, no goal weight — no focus on weight whatsoever. The point is to eradicate all those judgments and emotional hang-ups we’ve attached to eating, and learn to see food as just food again. Perhaps even crazier, you learn to trust yourself to make your own choices. Everything is on the table.]]></description>

For the study, recently published in the journal Molecular Psychiatry, researchers asked people being treated for psychiatric disorders at the Sheppard Pratt Health System in Baltimore whether they had ever eaten dry cured meat, undercooked meat, or undercooked fish. Those who had eaten cured meats—which include jerky and meat sticks—were three and a half times more likely to be in the group that was hospitalized for mania compared with the control group.]]></description>

Most obviously, the men displayed lower blood sugar levels at the start of their workouts when they had skipped breakfast than when they had eaten. As a result, they burned more fat during walks on an empty stomach than when they had eaten first. On the other hand, they burned slightly more calories, on average, during the workout after breakfast than after fasting.

But it was the impacts deep within the fat cells that may have been the most consequential, the researchers found. Multiple genes behaved differently, depending on whether someone had eaten or not before walking. Many of these genes produce proteins that can improve blood sugar regulation and insulin levels throughout the body and so are associated with improved metabolic health. These genes were much more active when the men had fasted before exercise than when they had breakfasted.

The implication of these results is that to gain the greatest health benefits from exercise, it may be wise to skip eating first, says Dylan Thompson, the director of health research at the University of Bath and senior author of the study.

When ghrelin was first discovered, it became known as the hunger hormone. It is made by the stomach when it gets empty, and whenever we go a few hours without food its levels rise in our blood.

But there is also evidence that ghrelin can enhance cognition. Animals that have reduced-calorie diets have better mental abilities, and ghrelin might be part of the reason why. Injecting the hormone into mice improves their performance in learning and memory tests, and seems to boost the number of neuron connections in their brains.

Now Jeffrey Davies at Swansea University, UK, and his team have found further evidence that ghrelin can stimulate brain cells to divide and multiply, a process called neurogenesis. When they added the hormone to mouse brain cells grown in a dish, it switched on a gene known to trigger neurogenesis, called fibroblast growth factor.]]></description>

Granted, this doesn't happen very often...it's not like I tell random people out of the blue that I make my own buns. That would be weird. Anyway, people look at me funny. They say, "You know that you can buy them for 2 bucks." And then they scratch their heads. Yes, I know that hamburger and hot dog buns are very cheap, but they also are very cheap to make, and they're so incredibly worth it. 

Bread is not hard to make, so don't be scared. I can start a batch when I get home from work at 4 and be eating these around 6:30. They have great flavor, they're soft, and they make your house smell incredible. My only complaint is that they only last a couple of days (which is true of all bread in my experience). After a couple of days, they'll dry out a bit. To remedy this, you can either butter and toast them or wrap up what you aren't going to use the day you make them and put them in your freezer. Just thaw them on the counter the day you want to use them. They freeze great, and you'll always have some handy. If you're throwing a BBQ this weekend, definitely try these.

Personligen upplever jag i alla fall att det snackades mer om det för kanske 4-5 år sen för att sen lugna ner sig lite, och sen fick det lite ny fart samtidigt som 5:2-dieten slog igenom vilket faktiskt även det är en typ av intermittent fasta.

När det gäller styrketräning och intermittent fasta här i Sverige så är det dock ingen tvekan om att det är Martin Berkhans leangains där du äter under 8 timmar och fastar 16 varje dag som har varit och fortfarande är störst.

Det är heller ingen tvekan om att det upplägget har fungerat väldigt bra för många. Om man söker runt på nätet så finns det folk som påstår att det skulle vara en väldigt dålig idé att äta enligt leangains om man försöker bygga muskler med motiveringen att du är katabol under för lång tid. De som påstår att effekten skulle vara så dramatisk verkar dock inte ha funderat kring att det är uppenbart att många faktiskt får väldigt bra resultat. Så det är ingen tvekan om att upplägget kan fungera väldigt bra.

Om det skulle vara bättre eller sämre än andra upplägg kommer därför att handla mer om små skillnader. Utöver ordentlig styrketräning, tillräckligt med protein, tillräckligt med sömn och en hyfsad koll på kaloriintaget så finns det med största sannolikhet inte någonting som du själv kan kontrollera som har en särskilt betydande effekt på dina resultat.

Studiemässigt är det tyvärr dåligt med studier på människor och de som finns har vanligen handlat om studier där man fokuserat på viktnedgång hos feta personer. Man har inte inkluderat någon träning och oftast har det varit 5:2 eller liknande upplägg med en mer långvarig fasta eller en period med väldigt lågt kaloriintag följt av en period med ”normalt” kaloriintag.

För ungefär en vecka sen publicerades dock äntligen en studie med ett upplägg väldigt likt leangains där man dessutom använde sig av redan tränade personer (1). Det är alltså en studie som faktiskt kan ge en början till ett svar på om det finns några mindre fördelar eller nackdelar med intermittent fasta á la leangains kontra att äta lite när som helst.]]></description>

Unlike patients with inflammatory bowel disease (IBD), who may exhibit similar symptoms, the organs and digestive tract of an FBD patient may be appear normal on tests such as endoscopy and blood work. FBDs are very common and include irritable bowel syndrome and functional dyspepsia.

Patients with FBD do not experience any nutritional deficiencies because of absorption issues in the gastrointestinal tract, but they very often have restricted their food intake to the point that they are no longer eating a well-balanced diet.

Because FBD patients can experience gastrointestinal distress when eating specific foods, these patients start eliminating those foods from their diet. The problem is that without careful consideration and guidance, this self-restricted diet most likely eliminates more foods than necessary.

I’ve argued that what many people are telling you may be inaccurate. In response, many of you have asked me what nutrition recommendations should say.

It’s much easier, unfortunately, to tell you what not to do. But here at The Upshot, we don’t avoid the hard questions. So I’m going to put myself on the line. Below are the general rules I live by. They’re the ones I share with patients, with friends and with family. They’re the ones I support as a pediatrician and a health services researcher. But I acknowledge up front that they may apply only to healthy people without metabolic disorders (me, for instance, as far as I know).

These suggestions are also not supported by the scientific weight of rigorous randomized controlled trials, because little in nutrition is. I’ve inserted links to back them up with the available evidence. They are not “laws” and should not be treated as such. No specific nutrients will be demonized, and none will be held up as miracles. But these recommendations make sense to me, and they’ve helped me immensely.]]></description>

Mostly plants.” The new book provides the practical steps, starting with advice to avoid “processed concoctions,” no matter what the label may claim (“no trans fats,” “low cholesterol,” “less sugar,” “reduced sodium,” “high in antioxidants” and so forth).

As Mr. Pollan puts it, “If it came from a plant, eat it; if it was made in a plant, don’t.”

Do you already avoid products made with high-fructose corn syrup? Good, but keep in mind, sugar is sugar, and if it is being added to a food that is not normally sweetened, avoid it as well. Note, too, that refined flour is hardly different from sugar once it gets into the body.

Also avoid foods advertised on television, imitation foods and food products that make health claims. No natural food is simply a collection of nutrients, and a processed food stripped of its natural goodness to which nutrients are then added is no bargain for your body.

Those who sell the most healthful foods — vegetables, fruits and whole grains — rarely have a budget to support national advertising. If you shop in a supermarket (and Mr. Pollan suggests that wherever possible, you buy fresh food at farmers’ markets), shop the periphery of the store and avoid the center aisles laden with processed foods. Note, however, that now even the dairy case has been invaded by products like gunked-up yogurts.

Follow this advice, and you will have to follow another of Mr. Pollan’s rules: “Cook.”

“Cooking for yourself,” he writes, “is the only sure way to take back control of your diet from the food scientists and food processors.” Home cooking need not be arduous or very time-consuming, and you can make up time spent at the stove with time saved not visiting doctors or shopping for new clothes to accommodate an expanding girth.]]></description>

Det är inte alls ovanligt att man träffar på personer som avstår från att dricka lightläsk då de tror att tillsatserna och sötningsmedlet är farligare än det socker som de får i sig från den vanliga läsken.

En annan vanlig fråga är hur dåligt det egentligen är att dricka läsk regelbundet. Hur stor påverkan kommer läsken att ha och påverkas kroppen även om man inte går upp i vikt? Det finns ett antal studier på djur och då främst råttor och möss där man sett en specifik negativ inverkan av sockersötad dryck där fruktosen i drycken verkar vara det som ställer till med den mest negativa effekten på hälsan (1, 2). I dessa djurstudier har man också sett att om man har en dryck som endast sötas med glukos så kommer effekten inte att vara lika negativ som en dryck med fruktos vilket ytterligare understryker fruktosens del i det hela. Korttidsstudier på människor har också visat att fruktosen i socker är det som har störst negativ inverkan på hälsan (17, 18).]]></description>

And the press articles have been frustrating to read, simply because they never include real data and they miss the differences between ‘tickets’, ‘reservations’, and ‘pay-for-access apps’… all of which are very different and have different implications for restaurants and customers alike.
This is my attempt to outline exactly what we’ve done with restaurant tickets, why it’s interesting, and the results of the experiment… along with real data from our restaurants.  People tend to treat business data as something that shouldn’t be shared, but I don’t really see the harm in openly examining the data.  So the numbers provided are the real numbers from Alinea, Next and the Aviary.

But every time I cook it for someone (which I do all the time because it is so easy and delicious) they ask me for the recipe so they can try it themselves. Now I can just send them a link :)

What’s weird is that this is just roasted cauliflower, it couldn’t sound any less glamorous. But for some reason roasting cauliflower completely transforms it from a vegetable people are pretty sure they don’t like into something they just can’t get enough of.

The coolest part of all is that anyone (like ANY anyone) can make this. I like to add curry powder to mine, but you can play around with whatever spices you like, or just make it plain. The trick is to use a very hot oven, around 450-500 degrees. Covering the cauliflower for the first 15 minutes steam cooks it. Then when you remove the foil the high heat browns and caramelizes it, giving the cauliflower a slightly crisp texture and complex flavor that is irresistible.

It still freaks me out how good this recipe is.]]></description>

One source after another promotes the protective powers of “superfoods,” rich in antioxidants and other phytochemicals, or advises readers to emulate the diets of Chinese peasants or Paleolithic cave dwellers.

But there is a yawning divide between this nutritional folklore and science. During the last two decades the connection between the foods we eat and the cellular anarchy called cancer has been unraveling string by string.

This month at the annual meeting of the American Association for Cancer Research, a mammoth event that drew more than 18,500 researchers and other professionals here, the latest results about diet and cancer were relegated to a single poster session and a few scattered presentations. There were new hints that coffee may lower the risk of some cancers and more about the possible benefits of vitamin D. Beyond that there wasn’t much to say.]]></description>

Studies show that rats that have eaten a lot are just as eager to eat chocolate cereal as hungry rats are to eat laboratory chow. Humans don’t seem all that different. More often than not, we eat because we want to eat—not because we need to. That’s just human nature. It’s not laziness,” said Dr. Freedhoff. “It’s fitting into the desire for ease: ease of thought and ease of implementation.”

As an eliminationist strategy, “gluten free” is the flip side of the nutrient fetish, in which substances are added, rather than subtracted, on much the same grounds, notably Omega 3s, polyphenols, amino acids, electrolytes and amino acids.

The problem is that, as Dr. Freedhoff has found, when you try to tell people they are fooling themselves by, for example, buying bread with “vegetables” in it (as per a current marketing campaign), or that Omega 3s don’t make their eggs any healthier, they react as if a foundational belief has been threatened, not just a dietary preference.]]></description>

The basic idea is this: Smear a food-grade drying oil onto a cast iron pan, and then bake it above the oil’s smoke point. This will initiate the release of free radicals and polymerization. The more drying the oil, the harder the polymer. So start with the right oil.

Go to your local health food store or organic grocery and buy a bottle of flaxseed oil. It’s sold as an omega-3 supplement and it’s in the refrigeration section because it goes rancid so easily. Check the expiration date to make sure it’s not already rancid. Buy an organic flaxseed oil. You don’t want to burn toxic chemicals into your cookware to leach out forever more. It’s a fairly expensive oil. I paid $17 for a 17 ounce bottle of cold-pressed, unrefined, organic flaxseed oil. As it says on the bottle, shake it before you use it.

Strip your pan down to the iron using the techniques I describe in my popover post. Heat the pan in a 200°F oven to be sure it’s bone dry and to open the pores of the iron a little. Then put it on a paper towel, pour a little flaxseed oil on it (don’t forget to shake the bottle), and rub the oil all over the pan with your hands, making sure to get into every nook and cranny. Your hands and the pan will be nice and oily.

Now rub it all off. Yup – all. All. ]]></description>

    <dc:creator>Aetles</dc:creator><description><![CDATA[So I’ve seen all the black bean brownies making their merry way around the food blogs, but I still haven’t come across a recipe that, despite the use of legumes, is all that virtuous. Yeah, throw some veggies into a batter of processed sugar and white flour! Hows about I deep-fry an apple? Or bacon-wrap some alfalfa sprouts? Um, no. This is precisely why I have not boarded that train.

If you’ve been around the My New Roots block, you’ll see I am a fan of baking with beans, as seen here and here. But never have I trumped myself to such an extent. I mean, these cookies take the cake, for sure.
Chocolate Chili Cherry Cookies are moist, rich, fudgy and filling, with just a tickle of spice that is oh-so unexpected and palette-warming-ly welcomed.  
I added dried cherries to one batch because I had some on hand. This was also incredible. Optional, yet incredible. If you’re a purist, I’d stick with the giant, dark chunks of bitter chocolate heaven. Those who like sweet-sour burst will dig the fruit addition. Walnuts would also be amazing. 
Basically, add whatever the heck you have in that pantry and you can’t lose. Maybe even deep-fried apple. 

Black beans – a superfood? Really?
Although they may appear humble, black beans are holding a major secret – they are loaded with a rare combination of both protein and fiber. Unheard of! 
Did you know that a one-cup serving of black beans contains 14 grams of protein – the same amount as a 2 oz. serving of a meat like chicken or a fish like salmon? And the 15 grams of fiber from that same one-cup serving is the equivalent of eating 3 cups of broccoli, 4 cups of Brussels sprouts, or 15 plums? 

You won't find this magical protein-fiber combination in fruit, vegetables, grains, meats, dairy products, nuts and seeds, or seafood. Not even close. And this explains why black beans are so incredibly good for your digestive tract, the blood sugar regulatory system and the cardiovascular system. ]]></description>

    <dc:creator>Aetles</dc:creator><description><![CDATA[The family doctor stared at me sternly, then issued his diagnosis and prescription.  He explained that my guts were mostly like in a bad state of ulceration, and my diet was the most probable cause.  The ulcers were about to start bleeding into my abdomen, which would be a very bad thing, and which was why hospitalization was one treatment option.

The other option (the doctor continued, with mordant glee) was to radically change my diet.  No more caffeine in any form: coffee, black tea, caffeinated soda, chocolate.  No alcohol.  No hot spices.  No acids – i.e., no tomatoes, no oranges.  No gradual tapering off; cold turkey was the only way, commencing at once.  Everything which injured, aggravated, or maimed my guts had to cease immediately.

(The food part was an extra dose of melancholy.  I’d have to stop my refreshing morning glass of orange juice.  No more would I proudly dare Indian restaurants to make me lamb curries “hotter than Indian hot”.  Out with my battery of hot sauces, the Tabasco flotilla. Gone were hot wings, Buffalo flavor anything, spicy pizzas – heck, pizza at all.  Gone too would be any Italian, tomato-based sauces.)

(And no alcohol?  I hadn’t been a regular drinker since my college days, but still adored Guinness, and appreciated fine whiskey.  My Russian DNA gave me a genetic predisposition in favor of vodka, as well.  All gone.)]]></description>

Fasting and feeding

My general position on the fasted phase is that it should last through the night and during the morning hours. Ideally the fast should then be broken at noon or shortly thereafter if you arise at 6-7 AM like most people. Afternoons and evenings are usually spent in the fed state.

However, the fast could also also be broken later in the day depending on your personal preferences and daily routine. I personally tend to break the fast as late as 4-6 PM since I work well into the night and rise later than most people with normal jobs.

The recommendation for fasting through the earlier part of the day, as opposed to the latter part of the day, is for behavioral and social reasons. Most people simply find it easier to fast after awakening and prefer going to bed satiated. Afternoons and evenings are times to unwind and eat. For adherence reasons during dieting, I've also found that placing the feeding phase later in the day is ideal for most people.]]></description>

Just as we eat grapefruit with reckless abandon when it is in season (see my previous post explaining How to Peel and Section Grapefruit), mangoes take center stage this time of year. Love them. I like to buy a bunch of them and cut several at a time to have on hand in the fridge for a quick snack or dessert. 

Mangoes can be a challenge to cut. If you try to cut them like other fruits, you're likely to end up with a big pile of mush trying to remove the flesh from the seed. It's not hard once you understand the size and position of the seed inside. The photos below will walk you through a simple procedure for cutting mangoes that you can quickly master.]]></description>

I don't know where I've been, because I'd never heard of it until I saw a recipe by Christie at Pepper Lynn on Pinterest. We eat a lot of steel-cut oatmeal in the winter months, but it never appeals to me once the weather heats up. Learning about refrigerator oatmeal excited me, because it offers a way to enjoy oatmeal year round. Yummy reader, Kelly, called this "Summer Porridge" in a comment on my Facebook page--I'd never heard of that either. After some googling, I discovered that refrigerator oatmeal, yogurt oats, and summer porridge are all names for the same thing. Whatever you call it, this stuff is delicious!]]></description>
